Served on a bed of spinach leaves or lettuce - this refreshing salad is worth a try if you want to make something exciting out of a tin of tuna and it only takes about 10 minutes to prepare.
Ideal for one person. The ingredients are open to substitution, change the cashew nuts or mix some hot mustard into the mayonnaise for example. You can even substitute a small drained can of orange segments, although we feel that this loses some of the freshness.
In a medium bowl combine the tuna, orange pieces, mayonnaise, cashews, ginger, lemon juice, salt and pepper. Mix well. Serve over a bed of spinach or lettuce leaves.
